Everyone out there has that dream – whether it’s starting your own business, creating a clothing line, writing a book, recording an album – and for us, that dream is CRAFTkitchen. We spent so many years dreaming about running our own restaurant that, now that we’re weeks away from opening, things are really beginning to feel surreal.
As we get closer and closer to opening, I’m reminded everyday that CRAFT wouldn’t be where it is now without the amazing team we’ve put in place. For me, talking about myself has always been difficult – I prefer to spread the love and share stories about people who are helping to make CRAFT possible (people like the teams at Colorado River Coffee Roasters and CraftHaus as well as all of the great people we meet at local Farmer’s Markets). So, today, we wanted to spread some of that love to our head project consultant – Cosimo Bocchini.
Aside from being our all-time favorite no-nonsense Italian (and one of the hardest working individuals I’ve ever met), Cosimo is an absolute magic worker when it comes to restaurant consulting. He handles everything for our kitchen – from making sure equipment is in on time to tracking down shipments to keeping our ever-growing team on track for opening – and does so with kindness, authority and over 15 years’ worth of experience. He got his start in restaurant and bar supply and consulting in 1999 and has worked on some pretty well known projects around the Valley throughout his time here, including Amarino Gelato, Bella Vita Ristorante, PTs Pub and Crazy Pita. Having someone on the team who I can trust to manage things the way I want them managed is so key with a project like CRAFTkitchen, where every little detail makes a difference.
As we inch in on our opening date, the only thing that I’m bummed out about is the fact I won’t get to see Cosimo everyday (though I’m sure I can come up with more work for him). If you’re in the restaurant and bar business, reach out to him – you won’t regret it.
